Transitioning to a new diet should be done carefully making sure the foods allowed meet all of your nutritional needs. Before making the step to a vegetarian or vegan diet it is a good idea to meet with a Dietitian who can ensure you won't face any deficiencies.
Some of the main concerns when switching to a vegetarian or vegan diet are:
Making sure you get enough calories (avoiding unintentional weight loss, or loss of lean body mass)
Getting enough of the following nutrition - iodine, iron, B12, calcium and vitamin D
A vegan diet will usually require you take supplements to ensure you meet your nutrient needs.
